A savoury take on the traditional cake

The times they are a-changing, so they say, and so, too, is our choice of wedding cake

Latest figures show that sales of wedding cheese cakes are nearly treble what they were two years ago.

The traditional wedding fruit cake appears to be on its way out, as we tire of chocolate cake and croque en bouche which were popular in the 90s and 'Noughties'. Instead we are opting for a tower of different cheeses to celebrate our nuptials.

A cheese wedding cake comprises a selection of cheeses, arranged in a tower and decorated as a centre piece for a wedding reception, in much the same way as a traditional cake would be.

The cheeses are usually stacked one of top of one another, starting with the widest at the bottom and the smallest on top, although some people prefer to present them on cake stands.

Smaller cheeses can be used to separate the larger tiers of cheese, and the cake can be decorated with flowers, fruit or foliage.

Teddington Cheese manager Tony Chuck said: “The couple often selects cheeses from locations which are special to them, which adds another personal dimension to the cheese cake.

“Experience has shown us that the best combinations provide a good contrast of sizes, colours, textures and milk types - usually some of the more traditional favourites as well as a few more unusual choices.

“Round cheeses tend to work best and we like to use a contrast of colours, sizes, textures and milk types.”

Wedding cheese cakes vary in size but on average they are three to seven tiers.

The total weight of cheese needed depends on the number of guests to be served and whether the couple wants to use the cake for an additional, more informal celebration as well as the main event.

Cheese cakes are perfect for an evening buffet - an assortment of breads, biscuits, pickles and other accompaniments is all that is needed.

As a general rule, allow around 100g of cheese per person - which for simple budgeting purposes works out at around £2 to £2.50 per head.

Exact costs vary depending on the cheese selected and how generous the host wants to be with the cheese.

The cakes can be decorated to match the theme of the wedding - either by the venue or the wedding organiser.
